Tasmania's north east has been home to Bridestowe Lavender Estate since 1921 and it's now one of the world's largest single commercial lavender farms.It's also one of the state's most beautiful sites during flowering in December and January.

The Estate produces the finest quality lavender flowers for the dried flower industry and most of the pure oil from the distillery is exported worldwide, highly prized by leading perfume houses and aromatherapists.

About 15% of the distilled oil is retained for domestic customers and for use in the Gourmet range of cooking products.

To showcase the Gourmet Range, Bridestowe has a range of recipes including this one for sausage rolls with a deliciously unique flavour:




  • 1-1.5kg sausage mince
  • 2 carrots (grated)
  • 1 zucchini (grated)
  • 1 onion (grated)
  • 1 teaspoon garlic (minced)
  • 2 teaspoons Bridestowe ‘Herbes de Provence’
  • 1 egg (lightly beaten)
  • ¼ cup bread crumbs
  • 3 tablespoons Bridestowe Tomato and Lavender relish
  • salt and pepper


  • puff pastry
  • 1 beaten egg (to glaze pastry)
  • Extra Bridestowe ‘Herbes de Provence’



  1. Mix all filling ingredients together.
  2. Roll pastry to required size/thickness.
  3. Put mixture on pastry
  4. Roll up and cut into desired lengths.
  5. Brush rolls with egg and sprinkle with Bridestowe ‘Herbes de Provence’.
  6. Bake in hot oven for 15 minutes.
  7. Lightly beat the egg and mix with the yoghurt and butter.

For each sheet/roll of pastry, Bridestowe usually gets around 6 sausage rolls, each approx 5-6 cm long.
