Pig in the House wines has released their latest vintage wines, the 2016 Pig in the House Chardonnay ($25) and 2015 Pig in the House Cabernet Sauvignon ($25)

While many winemakers hustle to convert to organic practices, Jason and Rebecca O’Dea have been quietly celebrating 21 years of growing their Pig in the House wines. The 6 hectares of organic vineyard is now run biodynamically with the use of mulch and compost an integral component of the vineyard management.

“We are now using less water in the vineyard and have seen a steady increase in the health of the vines and quality of the grapes,” explained vigneron Jason O’Dea.

“The vineyard was initially established in 1996 with conventional practices, however with the vineyard so close to our home, we were keen to stop using chemicals; it was logical to go organic.

“We have learnt a great deal about the importance of being in touch with our soils and environment. Different varieties have varied responses to ceasing chemical usage,” said Jason. “There is a lot to still learn about farming organically; it definitely remains a real challenge which is both exciting and daunting at the same time.”

The 2016 Pig in the House Chardonnay was harvested on the 12th February following an ideal ripening season. “Due to the brightness of the fruit only a small component (15 per cent) was matured in new and one year old French oak. The wine was racked off lees after four months prior to bottling.”

The new 2015 Pig in the House Cabernet Sauvignon is an expression of the vineyard and the region, with maturation in well-seasoned French and American oak used to support and complement the dark berry and spice flavours.

The Pig in the House of wines are distributed nationally and are available for tasting and purchase from the directly from the winery at
