Wood fired pizza oven by John Pellicano


The arrival of the wood-fired pizza oven into suburban backyards and kitchens has opened up a new world for pizza lovers and those who appreciate delicious, home-cooked food in the outdoors.

In his book Wood-Fired Pizza Oven, chef and food lecturer John Pellicano takes you through the steps of building a wood-fired pizza oven of your own and shares the secrets to cooking delicious pizzas and other easy-to-make meals.

This is his delicious and very simple recipe for Fig and Goat's Cheese Pizza.


Makes 1 Pizza


  • 12 dried figs, quartered
  • 1 pizza base
  • 4 fl oz (½ cup/125 ml) olive oil
  • 1 lb (450 g/ 2 cups) goats’ cheese 


  • Put the figs in a bowl and pour over boiling water to cover. Set aside for 10 minutes while the figs soften.
  • Drizzle olive oil evenly over the pizza base then arrange the fig quarters over the top.
  • Put the pizza straight onto the pavers in the preheated wood-fired oven using the paddle.
  • Allow to cook for 10 minutes, rotating occasionally, until the base is golden brown.
  • Sprinkle with crumbled goats’ cheese. Cut and serve.

[Ed: you can also use fresh figs, sliced or quartered. I like to add proscuitto, cooked bacon or ham, and cut down a bit on the goat's cheese Yum!]
