One Pan Roasts is a great cookbook for the winter months when the daylight hours seem to slip away so quickly and a warm fire beckons – or for any time of year when you just want to make something easy, delicious and impressive!

It has over 80 recipes for a range of dishes that are all easy to prepare and cook and are inviting to sit around the family table to share. Importantly, they also mean far less washing up to be done!

Here's a warming fish dish: 

 

Harissa Salmon

Ingredients (serves 2):

  • 350g baby potatoes, cut into 5mm thick slices
  • 4 teaspoons olive oil
  • sea salt and freshly ground black pepper
  • 180g green beans, trimmed
  • 2 thick salmon fillets (about 400g total)
  • 2 teaspoons harissa paste
  • 85g pitted green olives, chopped

Method:

Preheat oven to 200°C/400°F/Gas 6.

Toss potatoes with half the oil, season and spread out on a baking tray.

Roast for 15 minutes.

Toss potatoes, then push them to one side of tray.

Toss green beans with remaining oil and place on tray. Rub salmon with harissa, then add to tray.

Bake for 12–15 minutes, or until salmon is cooked through to your taste.

Scatter with olives.
