For those of us aiming to lead a more sustainable life
By Laura McKinnon
Real Food Projects is a great book for the general home cook and those endeavouring to lead a more sustainable lifestyle. It is written by Kate Walsh, who is a self-taught cook and sustainable food advocate.
Her aim with Real Food Projects is to deliver a cookbook that helps people transform how they cook, shop and think about food. This book is designed to teach people how to cook from scratch.
It has 30 skills that Kate defines as essential to cooking – putting granola together, making a nut butter, forming cordial, preserving and making mustard are some examples of the many.
Real Food Projects tries to discourage the use of fancy equipment and encourages the use of real ingredients that are locally based and as fresh as can be.
The cookbook has 46 recipes, made accessible through easy-to-understand, step-by-step instructions and supporting photographs of the wonderful food.
There are all sorts of delicious jams, chutneys (and a delicious burger recipe to accompany them), a no-knead bread, and crackers (that comes with an amazing ice-cream cracker recipe) among many other great recipes.
You can make your own sausages, butter and cordials from seasonal fruits.
If you are sustainably minded and would like an instruction book to help you on your journey, Real Food Projects is the place to start. It has everything you could want in terms of moving someone towards self-sustainable cooking. (Be mindful though that if you are truly sustainable this book has not given any indication that it has been printed on sustainably sourced or recycled paper.)
Overall, Real Food Projects is a great buy for those who want to cook from scratch and use all fresh ingredients. This type of cooking is highly likely to save you money whilst improving your health, due to the minimisation of ‘numbers’ that are often placed in many supermarket sourced foods.
Buy it and settle in for some real home cooking, and the satisfaction of making good food 'from scratch'.
Real Food Projects by Kate Walsh is published by Murdoch Books (NSW, April 2016; sc, 216pp, RRP A$39.99). Available at good bookstores or direct from the publisher »
