Huntington Estate is one of Mudgee and NSW's most respected winegrowers. Established in 1969 by Bob and Wendy Roberts, the winery is an icon of the region.

Bob Roberts was part of the infamous Bulletin Place wine crowd alongside James Halliday and the late, great Len Evans that was to transform the Australian wine industry. While the others invested in the Hunter Valley, Bob headed west to Mudgee.

He believed the cooler climate, moderate rainfall, higher elevation and lean soils of one of NSW's oldest grape growing regions was reminiscent of Bordeaux and perfectly suited to the ageing wine style and the Cabernet Sauvignon variety he loved.

The ensuing success of Huntington Estate was founded on five principles. Current owners Tim and Nicky Stevens, who took over Huntington Estate after building up his neighbouring Abercorn winery, continue to run the business by these principles.

1. Estate grown, made & bottled: "It may seem like an outdated wine-making model, and many would view reliance on fruit from a single vineyard as a constraint, but it's a commitment from us to authenticity and quality.

Every decision we make from pruning the vine to bottling the wine affects quality. Call me old fashioned but I want to be in control of these decisions," explained Tim.

2. Built to age: "Time is the true test of a great wine. Our wines are built to last with the best vintages still going strong more than 30 years on."

Reds are released at four to five years of age: "We barrel-age for 24 months, then bottle-age for at least another 24 before release. The high levels of tannin that make the wine somewhat aggressive when young, soften with age and are the foundation for a long life."

3. Only sold direct: "No middle man means great value for our customers and a liveable margin for us."

4. Substance over style: "What's inside the bottle is what matters the most to us and our customers. We invest every penny into making our wine the best it can be, leaving fancy packaging, pretty labels and clever marketing to others."

These new releases from 2011, now four years after vintage, represent the pinnacle of the brand. Grapes were picked from the 45 year old vines later than average as dictated by the season.

Both the Huntington Estate 'Block 3' Cabernet Sauvignon ($65) and the Huntington Estate 'Special Reserve' Shiraz ($36) spent two weeks on skins in open oak fermenters and then matured in 70 per cent new French Oak barrels for two years. The wines were matured in bottle for a further two years prior to release.

"2011 was cool and wet resulting in elegant and well-balanced wines. Yields were down after the battering the vines took in the drought of 2010, but quality was high."

"A combination of vine age and good management from the vineyard team allowed us to weather the storm and produce wines I'm proud of; age worthy, structural and complex with great tannins, and fruit and oak in harmony."
