Orange and raspberry cheesecake with mango coulis

Serves 12


  • 1 kg (2 Ib 4 oz) low-fat cottage cheese
  • 3 eggs, plus 2 egg whites
  • juice and zest of 1 lemon
  • juice and zest of 1 orange
  • 4 tablespoons cornflour (cornstarch)
  • 125 g (4½ oz / ½ cup) honey
  • 90 g (3¼ oz / 1 cup) cooked rice flakes, crushed
  • 300 g (10½ oz) raspberries mango coulis (page 187), to serve


Preheat the oven to 140°C (275°F/Gas 1).

Put the cottage cheese, eggs and egg whites, lemon juice and zest, orange juice and zest, cornflour and honey in a food processor and mix until smooth.

Lightly crush the rice flakes and spread them on a paper-lined 30x25 cm (12 x 10 inch) baking tray. Pour the cheese mixture over the rice flakes and top with half the raspberries. Bake for 45 minutes or until set and golden.

Allow to cool, then chill in the fridge and serve with mango coulis (about 1 tablespoon per person) and the remaining raspberries.
