Not Just Jam – another in the homesteading series by Matthew Evans »
Expand the shelf life of your fruit and vegies all year round
If you eat seasonally to take advantage of cheaper, fresher produce or you're passionate about flavour and what goes into your preserves, then start taking notes. Not Just Jam by chef-turned-food-critic-turned-farmer and TV personality Matthew Evans shows us how to expand the shelf life of fruit and veggies all year round with relishes, jams, curds and more.
Not Just Jam is Evans’ ode to the surplus of seasons – a collection of modern recipes for old-fashioned preserving methods. If you have your own orchard, lucky you, but it’s not necessary. You can scour the suburbs looking for bounty that hasn’t been harvested or buy the bargain boxes of produce that’s ‘at cooking stage’.
Matthew loves turning an average meal into an extraordinary one and preserves are the best way to make a meal more flavoursome. Add damson paste to your cheese plate, make a natural apple syrup to drizzle over pancakes, top your pizzas with passata or spread a delicious brown pickle on your sandwich.
Use this book as a launching pad for your own ideas – experiment with your own flavours, and adjust the pickles, conserves, relishes, pastes, curds, butters, cordials and jams to suit your taste, your region and your palate. A pantry with jars of produce is a sign of a life well lived and a future well catered for.
