Willie Smith's Cider continues their charge to bring to light true cider apple varieties and collaborate with a range of distillers and producers to create new and innovative premium Tasmanian ciders and spriits. The latest release, Black Beauty, shows off the world famouse Black Kingston cider apple.

As Head Cider Maker, Dr Tim Jones says "Just like in the world of craft beer where you see many single hop editions, the Willie Smith’s cider making team have been able to develop very special complex and intense ciders using just one variety of apple.  As crop yields increase each year it has been especially rewarding to be able to introduce more Australian drinkers to the wonderful world of cider apples.”

Tasting notes: reflecting the varietal characteristics of the apple, this cider displays intensely lifted, fresh green apple and sherbet aromas. Apple fruit sweetness and spiced apple caramel notes give way to woody drying tannin and racy acidity. This results in a complex and concentred cider that will develop in bottle.

The deep golden colour is a result of resting the cider apples between milling and pressing, allowing the tannins to oxidise and develop intense colour.

Food matching: This cider has a robust white wine style and works well matching with food.  One great dish example would be a crab apple slow braised pork knuckle with kohlrabi and picked radish salad.
