What exactly is local Hawai'i food? Just because (and maybe especially because) a dish has pineapple and ham, doesn’t make it local.

For food writer and Maui native Alana Kysar, the local food of Hawai'i is the heart and soul of the islands: superfine, rainbow-colored shave ice piled high with mochiballs; Portuguese bean soup and cornbread on a cold day; mouth-puckering, ice-cold pickled mango; poke served with hot white rice and ice-cold beers.

In Aloha Kitchen, Kysar takes readers into the homes, restaurants, and farms of Hawai'i, exploring the cultural and agricultural influences that have made dishes like plate lunch and poke a hit with mainlanders and other visitors to Hawai'i.

Using history, local knowledge, and aloha spirit, Kysar introduces Hawaiian staples like saimin, steamed pork buns, and liliko-chiffon pie, tracing their geographic roots and history on the islands.

Aloha Kitchen offers home cooks access to the kitchens and hearts of this enchanting destination, sharing recipes influenced by cultures around the world that Hawai'i locals have made their own.

With transporting photography, accessible recipes, and engaging writing, Kysar paints an intimate and enlightening portrait of Hawai'i and its cultural heritage that wil sure make you want to visit soon.
