Established in 2014 and situated on the Bellarine Peninsula, Yes said the Seal comprises a suite of refined, limited release cool maritime climate wines.

Crafted by Leura Park winemaker Darren Burke, the mantra for this elite range is to create wines from local Bellarine fruit that are distinguished and complex, yet inherently cutting edge.

The fruit for the Yes said the Seal range is sourced exclusively from a select group of Bellarine Peninsula Vineyards. Outstanding fruit of modest yields facilitates wines of finesse, elegance and impeccable structure.

 

2016 Pinot Noir (limited release)

Winemaking: the pinot noir is made using handpicked picked fruit only. Mostly destemmed with a small amount of whole bunch the fruit is fermented in small batches utilising ambient (natural/wild) yeasts.

Once each day the cap is gently submerged to rehydrate the skins and gently extract colour and tannins from the grapes.

A small portion of the juice ferments in new French oak barrels to bring more complexity and layers to the wine. Post ferment the wine is pressed, settled and then transferred to new and used French oak hogsheads for maturation and malolactic fermentation.

Following 10 months maturation in oak the wine is racked, blended, filtered and bottled without fining.

Tasting notes: bright vibrant fresh cherry in colur, this is an elegant, profound pinot noir displaying intense cherry, spice and red berry opulence. Splendid depth of aroma and flavour is achieved from superb fruit, cool to moderate fermentation, fine-grained French oak and minimal intervention.

A soft expressive wine offering tiers of bright fruit, delightful fragrance and soft textural tannins.

It will provide serious drinking pleasure immediately and well into the early 2020s.
