The second section explores the sensual, elemental world of Fire – discovering authentic recipes for melting Chilean marinated pork belly, tandoori lamb cutlets, Portuguese piri piri chicken, Malaysian satay and Turkish kepabs.

The last section of the book, celebrates Water’s bounty, including the simplest ways to cook seafood to perfection – from fillets to whole fish and elaborate show-stopping dinner party masterpieces like Sicilian salt-baked fish, Spanish fideua, Italian crab pasta, Vietnamese chá ca lã vuong.
