Aravina Estate - in the spectacular Margaret River

Aravina Estate was established in 2010 on the property then known as Amberley Estate. Perth businessman and seventh generation West Australian Steve Tobin, with his passion for winemaking, artistic and architectural design, had a vision to create a delicious visual dining experience for all and enhancing this with the production of wines of exceptional quality.

Today Aravina has a restaurant led by world-class chefs alongside 180 acres of expansive vineyards in the northern corner of the premium winemaking region of Margaret River.

2012 Chardonnay

Winemaking notes: the fruit for this wine is 100% Estate grown and was harvested earlier than usual. The fruit was hand picked in the early hours of the morning from low yielding (4.5t/Ha) vines and transported directly to the winery.

After crushing, the juice spent a short time on skins before being lightly pressed. Following settling the juice was racked (with a certain amount of lees) and then inoculated with yeast and transferred to French oak barriques for fermentation. The wine spent nine months in oak on lees to add complexity and texture to the wine.

The wine was blended, lightly fined and filtered prior to bottling.

It is medium lemon in colour with aromas of white peach, nectarine, pear and citrus with underlying spicy oak.

The palate is dry with a mealy and rich texture. Medium-bodied, this wine is tightly structured and displays a vibrant citrus and nectarine fruit intensity. The fruit is aptly supported by spicy French oak leading to a persistent finish.

Cellaring: enjoy now or cellar for up to five years.

2010 Cabernet Sauvignon

Winemaking notes: this wine highlights the reasons why the northern end of Margaret River is favoured for reds, in particular, cabernet sauvignon.

The Estate fruit was crushed into upright static fermenters for fermentation and each parcel of fruit is afforded the utmost attention in the winery with winemaking techniques aimed at optimising and enhancing the individual character of each batch.

Throughout the fermentation each batch is pumped over twice daily to gently extract colour, flavour and tannin from the skins. Upon completion of fermentation, the wine was drained from its skins directly to a combination of new and seasoned French barriques where it was allowed to undergo malo-lactic fermentation and mature for 20 months.

Individual barrels were assessed and blended before the wine was fined, filtered and bottled.

A deep crimson red  in colour, this wine abounds in concentrated cassis, blueberry and plum fruit flavours with restrained spicy overtones – hints of dried bay leaf. The palate provides layers of ripe fruit including blackberry, plum and cassis.

The flavours are well supported by delicately interwoven French oak characters and a savoury complexity. The long and fulsome finish is punctuated by well-rounded tannin ensuring the wine will reward long-term cellaring.

Cellaring: 5 – 10 years
