At Innocent Bystander's cellar door in Healesville, in the heart of the Yarra Valley, you can taste their range of fine wines (and a real cider!) all year round, but in summer prosecco is often top of the take-home list.
It's an excellent choice for raising a glass with friends and family. The light bubbles and flavour lift your spirits and you might even even find yourself cheering for la dolce vita – the sweet life!
Innocent Bystander's philosophy is all about making wines from the best fruit from the best regions. Quality wInes that are for sharing without any pretensions. Here are tasting notes for their Prosecco NV:
Innocent Bystander says: "We’ve always loved prosecco. So we gave making one a go, and it turned out pretty pucker. Clean, crisp and fruit driven. A sure win at any party, or any night of the week around a good cheese plate."
Winemaking notes: The fruit is sourced from Australia’s spiritual home of Italian wines, the King Valley. Long, warm summer days and cool nights mirror the conditions of the varietal’s home in Veneto.
This wine is make from 100% King Valley prosecco fruit that is harvested in the cool of night.
The juice is pressed to stainless steel tanks for a long cool ferment and it's aged on yeast lees in a tank. There's a secondary ferment, in October creating natural bubbles. It's a dry style of wine that is also vegan friendly.
Tasting notes: it smells of citrus, melon, lemon, almonds and honey and tastes like white peach, guava and lemon zest with a clean crisp finish.
Goes with:
- Seafood, especially shellfish and crab meat.
- Pasta with asparagus and creamy sauce
- Ancient grain salad with beetroot, Yarra Valley feta and pomegranate
- Those moments you want to feel a bit fancy
